Chilled before drinking. Clear, oat straw color. Very interesting aromas of nuts (maybe macadamia or hazelnuts), fresh-cut softwood timber, apple and lemon with persistent hints of fresh herbs. Slightly slippery or oily mouthfeel, medium to full body and an 80-grit texture. Flavors including tropical fruit…specifically pawpaw (Asimina triloba), tart green apple, lemon and green figs were abundant. Plentiful acidity that was well-integrated and not at all dominant. Then it ended with a long tart mouth-curling finish and a delightful lemon tasting aftertaste that left a trace of fresh grated ginger in your mouth. WOW, not your common garden-variety white wine…this was an interesting and zesty varietal that was captivating both with and without food. We usually have the pasta with salmon cream sauce dinner with Old-World Chardonnay; however, this Semillon pairing was simply superb and the best wine we have ever paired with it!!!. We called it an unusual white, but also a bewitching wine we strongly recommend.
