Paired With: A first course Chilled almond soup (blanched and ground almonds, garlic, bread crumbs, olive oil, white wine vinegar, white grapes, milk and a little sherry).
Tasting:
- Very slightly chilled and opened 20-minutes before drinking. Clear, light amber color. Tangy aromas of caramel, toastyness, and aged earthy wood. A mouth feel that was rich, elegant, dry, medium body and a 200-grit texture. Strong, yet delicate tastes of over ripe apple, dried apricots, orange and spiciness intertwined with a substantial nutty background. Well integrated lively acidity and a long smooth opulent finish that was filled with savory smoky tastes of aged wine. With the almond soup it was simply a pairing made in heaven!!! Possibly one of the best wine pairings we have ever had. Outstanding sherry that’s a GREAT value for the price. Both of us grew up having a small glass of sherry before dinner and developed an acquired taste for it. If your a sherry drinker this is a real winner and if you aren’t this is a perfect sherry to begin drinking.
