He said: Opened two hours before drinking. Crystal clear, inky dark garnet color with a light rim. Lots of leather, earth and red fruit aromas. Very smooth mouth feel and a strong dry taste with cherry, current and plum that continues through the long lingering slightly bitter finish. GREAT Chianti alone and with the dinner. It’s just a VERY nice Chianti Rufina that I’m sure we will have again. Secretly I would like a bottle of our favorite Chianti to have side-by-side…it was that good.
She said: The challenge here, of course is to find a wine that pairs well with both lobster and fillet mignon. Our wine steward recommended a Chianti that is double fermented and we agreed although I had some doubts. He opened the wine two hors before dinner and it was absolutely divine sipping as we waited for our dinner to be served. With full rich bouquet that let to a series of complex flavors that changed as it passed over the palate before it ended with a long tasty finish. Great! But even better with the dinner. This is a wine that would even be great with a hot dog.
