Tasting:

    He said: Opened 3-hours before drinking. Clear, but so inky dark you can’t see through it; dark garnet with a purple cast and a similar color rim. Cherry, plum and lots of wet wood in the aroma. Intense, bone dry mouth-feel; VERY RICH earthy mineral and fruit taste that carries on an on through the long finish. WOW, WOW, WOW this was one FANTASTIC red Burgundy…depth and complexity abound!!!. A bouquet that jumps out of the glass without a swirl, flavors that are rich yet not over powering, wonderful structured tannins and a wine that was so easy drinking it was like smooth nectar. An OUTSTANDING red Burgundy that was truly memorable.

    We had this at a wine/dinner party where we served five New World (California) and five Old World (France) Pinot Noir wines that were comparably priced. We drank the wines blind and at the end of the night this Domaine Chevilloné was “the” favorite of everyone at the table…Russ, please put two bottles aside for me, The Caviste wines stood up VERY well to the best California had to offer!!!

    She said: Opaque, dark garnet red color with a light rim. Lots of well spaced rapidly moving legs. Fabulous from start to finish, especially in the mid-palate. The wine offered lots of dark cherry aroma and flavor with a dry, smooth, full bodied mouth-feel. The complexity of flavors and the experience on the palate made this an outstanding taste adventure. The finish was long and ended with a burst of pleasant tannins. Although way out of my price league, it was outstanding and I look forward to another bottle (hint).
