Opened 90-minutes before drinking. Clear, strikingly beautiful pale ruby color with the same color rim. Vibrant earthy cherry and fresh cut conifer sawdust aromas. Bone dry, tart mouth feel, light body and a 60-grit texture. Sour cherry, red current and unripened cranberry flavors. Significant edgy acidity, grippy tannins from mid-palate to the end and a long delicious bitter anise tasting finish. WOW, GREAT mouth experience with its potent acidity and vigorous tannins. A little sip goes a long way with this one. Fantastic pairing with the lasagna because it dramatically contrasted with the mellowness of the Mozzarella, Ricotta and well ripened Asiago cheeses and dovetailed perfectly with the strong venison taste. An exceptional value Nebbiolo that was a very versatile and delicious wine.
