Note: For Mothers Day the Undercurrent Restaurant had a delicious three course virtual dinner served with three different wines. This wine was served with the third course.
Opened one hour before drinking. Just clear, inky purple garnet color with a lighter rim. Light cherry, plum and wet wood aromas with hints of wind-blown dust off the dry Wyoming prairie. Smooth, lively and spicy mouthfeel, medium to full body, and a 100-grit texture. Cherry, plum, blackberry, a touch of oregano, jalapeno and strong spicy pepper flavors. Medium acidity, fine grained tannins and a long bitter finish. This Cabernet can be described in one word…BOLD!!! And, if that’s what your looking for it’s “Not Bad” and reasonably priced. The ribeye was very flavorful and it paired pretty well; however we were tempted to open a better Cabernet Sauvignon and try it side-by-side with the Iron and Sand. In the end we really didn’t think it was necessary…it was what it was!!! We called this a very drinkable bold and spicy Cabernet.
