Chilled before drinking. Clear, wheat straw color. Strong melon, lemon and apple aromas with ephemeral whiffs of yeast and floral. Smooth, fresh and lively mouthfeel, medium body and a 150-grit texture. Abundant lemon, honeydew melon and quince flavors. Plenty of bright acidity and a citrus and pastry tasting finish that ends with an extended chalky mineral taste. WOW, this had a backbone of fresh acidity and was a unusually vibrant Chardonnay. Very delicious paired with the salmon and the chalky mineral really caught our fancy. We called it a high-spirited white Burgundy.
