Paired With: Ham casserole with cabbage, apple and sweet potato, flavored with onion and caraway seed.

Chilled before drinking. Clear, sparkling cherry red color. Light aromas of cherry (only because it looks like it should smell like cherry), not quite ripe strawberries, dry grass, Amelanchier canadensis blossoms on a still Spring afternoon and tiny hints of a mushroom house interior. Smooth, light-body and velvety soft texture; with flavors of cherry (that’s really there), strawberry, current and a mineral taste that’s like drinking water out of a limestone spring. At mid-palate or a little after, the wine explodes with flavors and mouth-feel that extend through (and beyond) a fantastic tart, dry, finish that had just enough spice to make it tantalizing. WOW this was a Rosé that’s easy to get hooked on. Balanced fresh acidity and supple tannins with just the slightest grip and a lingering taste that really keeps you interested. Vicky said “it was a perfect wine to drink when the cherry trees are blooming”, and it would be…the color, taste and whole drinking experience SCREAMED spring time fresh and refreshing. Great pairing with the dinner, a wine I would recommend for sipping ANYTIME and a Rosé I would suggest for year-around-drinking. It’s not a Bandol Rosé, but it gets equal billing and we would describe it as UNIQUE and OUTSTANDING Languedoc-Roussillon Rosé and we savored every sip!!!
