Tasting:

Opened 30-minutes before drinking. Clear, dark ruby red color with the same color rim. Rich cherry combined with reticent earthy aromas that reminded us of fresh plowed sod, digging into a pile of humus and dry firewood that had been stored outdoors for years. These aromas were an integral part of every sip until it was swallowed. Smooth, medium-body, chalky texture and undulated mouth-feel; fruity flavors of ripe cherry, plum and strawberry that carried through and combined with lively acidity and well structured tannins in a long savory finish that ended with just a touch of spice. This wine was like being enveloped in a fog bank…the first sip was smooth, lavish, yet unassuming; followed by successive sips that were increasingly overflowing with intertwined aromas and tastes that were both engulfing and captivating. Delicious unpretentious red Burgundy that made a salmon dinner special…that’s a wordy way of saying we loved it!!!
