Chilled before drinking. Clear, light golden color. Forest floor and citrus aromas. Than a dramatic change to a powerful tart herbal taste that’s predominately thyme, but with hints of sage, lemon and lime flavors that changes again to a long, earthy, mineral finish. A unique and distinctive combination of mouth-feel and flavors…it was a rich texture with bright acidity, not a bit of sweetness and we would say the citrus flavor dominated, but it was the strong herbal thyme flavor that we both mentioned at the end of every sip. It was fine with the oyster quiche, but I would rather have paired it with raw oysters. A unique white wine that’s screaming for a salty seafood pairing.
